Caveman Cuisine: Greens, Eggs, & Ham (or bacon)

Ham comes from pigs.  Bacon also comes from pigs.  Therefore, bacon is ham? 

Faulty logic aside, this recipe makes for an awesome breakfast.

3 eggs (2 whole & 1 egg white lightly scrambled)
2-3 cups fresh kale (chopped)
4-5 medium white mushrooms (thinly sliced)
2 slices uncured bacon
Fresh ground black pepper
1 orange (for dessert)

Place bacon on a medium to large frying pan and turn to medium heat.  While the bacon cooks, slice the mushrooms and kale, scramble the eggs, and set aside.

Once the bacon has become crispy, place on a paper towel and set aside.  Pour the bacon fat onto a small frying pan.  To the large frying pan, add the mushrooms and sautee until they start to become translucent.  Add the kale and mix with the mushrooms; cover with a lid and turn the heat down to low. 

Turn the small frying pan to medium heat and warm up the bacon fat to the point where a drop of water sizzles.  Turn the heat down to low and add the eggs.  Once the eggs have cooked, plate them, with the greens and bacon.  Season with fresh ground pepper to taste.
