Caveman Cuisine: Apple Sausage Saute
This is a hot, hearty breakfast that will make you forget about oatmeal.
Ingredients:
1/4 head green cabbage (thinly chopped)
2 apples (chopped)
3oz turkey breast (chopped)
1 pork sausage link (thawed)
1 small carrot (shredded)
Fresh ground black pepper
1 sprig fresh rosemary
1 tbsp pastured butter (bacon fat or coconut oil would work too)
Directions:
Over medium heat, melt 1/2 of the butter in a large saute pan. Add the cabbage and the carrots and cook until soft. Plate the vegetables on a serving dish, and add the other 1/2 of the butter to the pan.
Once the butter melts, add the apples to the pan and cook until al dente. Remove the apples from the pan and spread over the vegetables.
Remove the pork sausage from its casing and add to the pan along with the turkey breast. Cook the sausage/turkey mix for about 2-3 minutes (until sausage is firm) and spread over the apple/veggie mixture. Top with fresh ground black pepper and a sprig of fresh rosemary.
Yield: 1 Caveman-sized portion
Wow! Tried this today (found it on chowstalker.com- it was fabulous! I sprinkled a little cinnamon on the apples as they were sautéing. So nice to have a hearty paleo breakfast option without the eggs. Thanks for the post!
