Quite possibly the cutest cave-meal ever.
Ingredients:
2 Cornish Game hens
1 bag baby carrots
1 tbsp maple syrup
1 lb Brussels sprouts
2 tbsp light olive oil
Fresh ground black pepper
1 sliced lemon or lime
6 cloves garlic (peeled)
1 small onion (chopped into quarters)
Sea salt
1lb jewel sweet potatoes
Directions:
Preheat your oven to 350 degrees.
Prepare the game hens by rubbing the skin with olive oil, sea salt, and black pepper. Stuff sliced lemons/limes into the body cavity along with garlic and onions. Place the hens breast-side down on a a roasting pan, put the hens in the preheated oven.
In a large bowl, mix Brussels sprouts, jewel sweet potatoes, 1 tbsp olive oil, and salt/pepper. Once the Brussels sprouts and potatoes are coated, place them on 1/2 of a large a foil lined baking sheet.
In the now empty bowl, thoroughly mix baby carrots, maple syrup, salt/pepper, and 1 tbsp of olive oil. Place them on the other half of the baking sheet and put in the oven for 20-30 minutes.
