Miss ham sandwiches? Me too. Fortunately, lettuce subsitutes nicely for bread and the end result is a fresh, satisfying, slightly nostalgic lunch-time meal.
Ingredients:
Uncured ham (4-5 slices)
Roma tomatoes (sliced)
White onion (thinly sliced)
1 tbsp home-made or store-bought mustard
4-5 leaves romaine lettuce
Directions:
On a serving plate, lay the romaine lettuce leaves down lengthwise so that the sides overlap. Lay the ham slices across the lettuce and slather with mustard. Top with tomato and onion.
Note:
I've also tried this recipe omitting the mustard and adding sliced hard-boiled egg and avocado (sort of like a hand-held Cobb salad) and it was awesome.
