Caveman Cuisine: Baby Beef Burgers

It's the baby cow that makes it good.

Ingredients:

Burgers-
1lb ground veal
1 egg yolk
1oz cube of cheddar cheese (grated)
1 clove garlic (minced)
2 tbsp red onion (minced)
6-7 mushroom steps (minced)
Fresh ground black pepper
1tbsp fresh parsley (minced)
2 tsp butter

Toppings-
4 large leaves green leaf lettuce
4 thick slices of beefsteak tomato
1 Hass avocado (sliced)
1/4 small red onion (thinly sliced)
6-7 medium portobello mushroom caps (sliced)
2 tsp butter

Sweet potato "chips"-
2 medium sweet potatoes (sliced)
1 tbsp extra virgin olive oil
1/4 tsp sea salt


Directions:

Preheat your oven to 425 and prepare sweet potatoes by coating them in olive oil and spreading them out on an aluminum foil lined pan.  Season with sea-salt.  Put the sweet potatoes on the top rack.  The potatoes will take approximately 20-30min to cook and may need to be flipped a few times.

In a medium saute pan, melt 2 tsp butter over medium heat.  Add onions and mushroom stems and cook until caramelized (about 5 min).  Add garlic and stir though for about 30s (avoid burning the garlic).  Set onions, mushrooms and garlic aside in a large bowl

Add the sliced mushrooms to the saute pan and cook until they exude their liquid and brown (about 3-4) minutes and set aside with the other toppings (lettuce, tomato, fresh onion and avocado).

In the large bowl, add ground veal, parsley, cheese and egg to the sauteed onions, mushrooms and garlic.  Season with fresh ground black pepper.  Use your hands to combine thoroughly.  Form the mixture into 4 patties.

Bring the saute pan to medium-high heat and place the patties carefully in the pan.  Allow the burgers to cook for 3-4 minutes before flipping (they should come up easily).  Cover the pan and continue to allow the burgers to cook for another 3-4 minutes.

Plate the burgers on the lettuce leaves, tomato, onion and sauteed mushrooms.  Top with avocado and serve to your hungry guests/family.

Yield: 4 delicious servings
