Fresh herbs, a few tomatoes, and a couple of hot buttery eggs.
Ingredients:
2 eggs
1 tbsp butter (or coconut oil)
Cherry tomatoes
2-3 fresh basil leaves (finely chopped)
1 sprig fresh rosemary (finely chopped)
1 sprig fresh thyme (finely chopped)
2-3 leaves Swiss chard
Directions:
In a small saute pan, melt 1 tbsp of butter over medium heat. In a small bowl, fold the fresh herbs into your eggs.
Pour the herbed eggs into the melted butter and cook to desired consistency. If you decide that you want the yolk incorporated into the eggs, simply run your spatula through the eggs, moving from the edges to the center, as the eggs curdle.
Serve over a bed of fresh chard and garnish with cherry tomatoes.
