Surf and turf doesn't have to be for dinner. Shrimp and sausage make mouths happy!
Ingredients:
2 eggs
2 pork sausage links (loose, removed from casing)
10-12 small shrimp (thawed)
1 tbsp pastured butter
2 cups chopped kale
2 tbsp onion (chopped)
1 clove garlic (minced)
Fresh ground black pepper
Directions:
In a saute pan heated to medium heat, cook the sausage, shrimp, and onions until sausage is completely cooked and onions are translucent (about 3-5 minutes). Remove from the pan and set aside.
Add the kale to the pan and continue cooking until it wilts (about 3-4 minutes). Set aside.
Add the pastured butter to the pan, and once it melts, crack your eggs into the melted butter. Fry the eggs until the whites are set, flipping once to set the yolk if desired.
Plate the greens, sausage/shrimp mixture, and top with fried eggs. Season with fresh black pepper.
