Caveman Cuisine: Tuna-melt Omelette

The classic tuna-melt goes primal.


3 eggs (scrambled)
1/2 tsp parsley
Black pepper
1-2 tbsp shredded cheddar cheese
1/2 can albacore tuna
Mixed baby greens
1 tbsp avocado oil


Add the avocado oil to a small skillet and heat to medium.  Mix the parsley and a pinch of black pepper to the eggs.  Add the eggs to the skillet and allow them to partially set, occasionally lifting the edges of the eggs with a spatula to encourage the process.

When the eggs are mostly set, add the tuna and sprinkle with cheese.  Using the spatula, fold the omelet in half and cover.  Allow the omelet to cook for another minute or two before plating over mixed greens.

Yield: 1 melty serving
