Caveman Cuisine: Eggs in a Nest

Fried eggs in a "nest" of spicy dandelion greens.


3 cups fresh dandelion greens (cut the last 1-2in of stem off and thoroughly rinse)
1-2 tbsp spicy brown mustard
1-2 tsp Parmesan cheese
2 cloves garlic (minced)
1/4 cup organic carrots (shredded)
3 eggs
2 tbsp coconut oil
Fresh ground black pepper
2 slices bacon (pre-cooked)


In a large skillet, heat 1 tbsp coconut oil over medium heat.  Add carrots and cook for 2-3 minutes.  Add garlic and dandelion greens and cook until greens are wilted.  Add mustard and Parmesan cheese and stir through.  Using a spatula, stir the greens in a circular direction forming a "nest".  Plate the greens and wipe down the skillet.

Add the remaining tbsp of coconut oil to the skillet and bring back up to medium heat.  Add the eggs and fry for 2-3 minutes on each side (or to desired doneness).

Set the eggs into the center of the "nest" and season with fresh ground black pepper.  Top with bacon.

Yield: 3 eggs in a nest are worth one full belly
