Caveman Cuisine: Eggspeare's Breakfast


Paleo or Primal -- that is the question.  
Whether 'tis nobler in the mind to suffer
The slings and arrows of avoiding pork and dairy,
Or to take arms against a sea of salt, saturated fat and casein.
  


Paleo Recipe Ingredients:

2 omega-3 enhanced eggs plus 1 egg white (scrambled)
Leftover roasted asparagus from Easy Roasted Asparagus recipe (chopped into bite size pieces)
Fresh ground black pepper
1 tbsp organic coconut cream
1 clove garlic (minced)
2-3 white mushrooms (diced)
2 cups mixed greens
1 tbsp extra virgin olive oil


Primal Recipe Ingredients:

3 eggs (scrambled)
Leftover roasted asparagus from Easy Roasted Asparagus recipe (chopped into bite size pieces)
Fresh ground black pepper
1 tbsp organic sour cream
1oz grated organic cheddar cheese
2 cups mixed greens
1 tbsp rendered pork fat from Beer Butt recipe

Directions:

In a medium sized bowl, combine eggs, asparagus, cheese (primal) and black pepper.  Heat your cooking oil in a medium-sized saute pan over medium heat and add mushrooms and garlic (paleo).  Add egg mixture and occassionally runa wooden spoon or spatula across the bottom of the pan to keep the eggs from burning or sticking. 

When eggs have reached desired doneness, serve over mixed greens.  Serve with a side of Rosemary's Bacon and top with sour cream (primal) or a side of Tres Frutos and top with a coconut cream (paleo).

Yield: 1 existential portion
