Caveman Cuisine: Maple Butter Bacon Bites


Big bacon taste in a tiny little bite!












Bite" Ingredients:

9 pieces of pre-cooked bacon (approx 1 inch square)
3 oz coconut butter (softened, see directions here)
3 oz unsweetened chocolate (melted, see directions here)
~1 tbsp coconut oil (for greasing pan)

"Bite" Directions:

Combine coconut butter and chocolate.  Grease 12 sections of a silicone mini-muffin tray with coconut oil and place on top of a flat baking sheet. Pour the chocolate-coconut butter mixture into the molds leaving about 1/2 to 1/4 inch of space.  Drop a piece of bacon into each mold and lightly press it in to submerge.

Put the entire tray into the fridge to cool and harden.















Frosting Ingredients:

2 tbsp bacon fat (see directions here)
1 tbsp unsweetened cocoa powder  (I used regular Hershey's Brand)
1/4 tsp pure bourbon vanilla
2 tsp pure grade B maple syrup
2 tsp melted ghee (i.e. clarified butter.  I used Purity Farms brand)

Frosting Directions:

In a small bowl, combine bacon fat and ghee, mixing until smooth.  Add vanilla, maple syrup, and cocoa and mix thoroughly.


Assembly Instructions:

When the bites have cooled, pop them out of the mold and place on a sheet of wax paper.  Add a dollop of frosting on top of each bite.  Store in the refrigerator until ready to serve.

Yield: 9 bacontastic bites
