White as the driven snow, these delectable morsels of pure coconut goodness are the perfect finish for a Paleo meal.
Ingredients:
1/2 tsp pure vanilla extract
3 tsp coconut oil
Pinch sea salt (optional, but brings out the coconut's natural sweetness)
~1/2 cup unsweetened coconut flakes plus additional for coating (again, I prefer Let's Do...Organic brand coconut flakes
)
Directions:
Heat a small pot of water to just below boiling. Turn the heat off, and put your package of creamed coconut into the warm water. As the creamed coconut heats up, you will have to knead it several times to completely soften it.
Once the creamed coconut is ready to use, put it in a bowl and mix it with the vanilla extract, coconut oil, and sea salt. Incorporate in as much coconut flake as the mixture can handle (~1/2 cup, keeping in mind that you want the mixture to hold together). With the palms of your hands, form small thumb sized balls which you will then coat with loose coconut flake.
Place the finished snowballs on a sheet of waxed or parchment paper and put in the refrigerator to harden (~30 min) before eating.
Yield: 36 chilly balls
wait, okay silly question. Ive never used creamed coconut. So you put the coconut IN the water? You're not using double-boiler? Does it absorb all the water or some & I just take it out when pliable-ish?
ReplyDeleteThere's no such thing as a silly question Michelle! The creamed coconut from "Let's do Organic" comes in a sealed plastic bag. You just put the sealed bag into the warm water to soften the creamed coconut up. If you are using another brand that does not come pre-sealed, you would definitely want to use a double boiler or a simple pyrex measuring cup placed in a shallow pot of water.
