Crunchy fried cheese bits, creamy egg yolks, and chewy greens.
Ingredients:
3 eggs (I used local duck eggs)
2-3 cups fresh kale (chopped)
2-3 tbsp shredded cheddar cheese
2 tbsp ghee or coconut oil
Directions:
Add 1 tbsp ghee or coconut oil to a medium skillet and bring to medium heat. Add kale to the skillet and cook for 3-5 minutes. Plate greens and add remaining ghee or coconut oil to skillet. Fry eggs to desired doneness (Tip: Tilting the pan and spooning hot oil over the eggs helps them cook).
Plate eggs over greens and add shredded cheese to skillet. Allow cheese to cook up and scrape off the pan after 1-2 minutes. Top eggs with fried cheese.
Yield: 1 crispy, creamy, chewy serving
