Caveman Cuisine: Man vs Salad



A big @$$ salad for big @$$ appetites.

Ingredients:

3 hard-boiled eggs (I used local duck eggs)
1 tbsp roasted pumpkin seeds
2 tbsp extra virgin olive oil
1 tbsp Sriracha hot sauce or an equivalent amount of red-wine or coconut vinegar
4 cups mixed baby greens or chopped lettuce
1 quarter medium white onion (chopped)
3 small radishes (chopped)
1 small carrot (shredded)
4-5in hot-house cucumber (diced)
Fresh ground black pepper

Directions:

Starting with the lettuce/greens, layer all the vegetables into a large bowl.  Top with Sriracha/vinegar, oil, fresh ground pepper and hard-boiled eggs.

Yield: 1 moving portion
