Pig Rib Salad
Ribs on a salad? Yes way!
1/2 rack leftover BBQ pork ribs with meat removed from bones (Need a good rib recipe? Try cooking up some of my dad's Firehouse Ribs!)
2-3 tbsp home-made dressing (Check out this recipe for a ghee/sour cream based primal dressing)
1-2 tsp Sriracha hot Thai chili sauce
2-3 cups shredded romaine lettuce
1/4 small red onion (thinly sliced)
1 small carrot (shredded)
In a large bowl, layer lettuce vegetables and rib meat. Drizzle with dressing and Sriracha.
Yield: 1 ribtastic serving
