Caveman Cuisine: Sweet Baby Potatoes

Organic jewel sweet potatoes smothered in coconut butter and spiced with cinnamon.

1 lb organic jewel sweet potatoes
1 tbsp coconut oil
4oz coconut butter

Add your sweet potatoes to a roasting pan and coat them with coconut oil. Pierce each potato with a fork and place them in a 400 degree oven for 30-45 minutes (or until soft).

When the potatoes are done cooking, remove them from the oven and allow them to cool for a few minutes. Scrape the flesh from the skin, and mash with a fork.

Plate a scoop of mashed sweet potato and top with a spoonful of coconut butter and a dash of cinnamon.

Yield: 4 sweet servings (Have I said "sweet" enough? No? Sweeeet.)

  1. Wow that looks so good! Where do you get coconut butter at?

  2. Its sold as "creamed coconut" at Whole Foods and also as "Coconut Manna". If you're a coconut lover, you definitely need to pick some up!
