Caveman Cuisine: Sweet Baby Potatoes
Organic jewel sweet potatoes smothered in coconut butter and spiced with cinnamon.
Ingredients:
1 lb organic jewel sweet potatoes
1 tbsp coconut oil
4oz coconut butter
Cinnamon
Directions:
Add your sweet potatoes to a roasting pan and coat them with coconut oil. Pierce each potato with a fork and place them in a 400 degree oven for 30-45 minutes (or until soft).
When the potatoes are done cooking, remove them from the oven and allow them to cool for a few minutes. Scrape the flesh from the skin, and mash with a fork.
Plate a scoop of mashed sweet potato and top with a spoonful of coconut butter and a dash of cinnamon.
Yield: 4 sweet servings (Have I said "sweet" enough? No? Sweeeet.)

ReplyDeleteIts sold as "creamed coconut" at Whole Foods and also as "Coconut Manna". If you're a coconut lover, you definitely need to pick some up!

ReplyDeletegeez. i am late to comment but i just found this on chowstalker!! i'm gonna make this asap. i have a few jars of coconut butter and just bought some sweet potatoes. i can't imagine a more heavenly treat.
