Caveman Cuisine: PEG (Pork, Eggs, & Guac)
Start the day with this delicious combination of salty pulled pork, cool guacamole, and creamy fried eggs.
Ingredients:
2-3oz pulled pork (If you need a recipe, try my Coconut Water Pulled Pork)
2 tbsp prepared guacamole (Wholly Guacamole brand, or simply mashed avocados with lime juice, garlic, onion, jalapeno peppers, and sea salt)
3 eggs
1 tbsp coconut oil or ghee
Directions:
In a small frying pan, melt ghee or coconut oil over medium heat. When the oil is hot, crack three eggs into the pan. Allow the eggs to cook for a 2-3 minutes, gently lifting the edges, then add the pulled pork over the top and cover the pan. Allow the eggs and pork to cook for an additional 2-3 minutes. Top with guacamole and serve.
Yield: You'll be PEG'ing for more! (Ba-dum-psh!)
