Caveman Cuisine: Pepperoni Pizza Omelette
Freak your kids out by serving them "Pizza for breakfast?! No Wayz!!! Om, nom nom nom!"
Ingredients:
3 eggs (scrambled)
2oz shredded mozzarella cheese
8 slices of uncured, natural pepperoni
2 tbsp quality marinara
Sprinkle Parmesan cheese
Sprinkle Italian herb blend
1 tbsp butter or olive oil
Directions:
In a medium frying pan, heat oil/butter. Add scrambled eggs when the oil is hot, but well before it starts smoking. (It's better for the oil to be too cool than too hot.)
As the eggs set, use a spatula to lift the edges, allowing the uncooked egg to pour under the cooked portion.
Before the egg sets up completely, place pepperoni over 1/2 of the omelette and sprinkle with mozzarella cheese. Fold the other half of the omelette over and cover with the heat turned off for 2 minutes.
When plating the omelette, sprinkle with Parmesan cheese, herb blend, and a drizzle of marinara.
Yield: An omeleetza?
