Caveman Cuisine: Primal Toad in the Hole
This Paleo version of the classic recipe is not only delicious, but it reminds me of the lovable Paleo blogger Primal Toad!
Ingredients:
2 slices of lightly toasted Paleo "bread" (such as Red Bread)
2 eggs
1 tbsp coconut oil or butter
Fresh ground black pepper and sea salt
Directions:
Heat oil in a small frying pan over medium heat. Crack your eggs into the oil and fry them until the whites are cooked but the yolks still runny.
Put your two slices of toast on plate and cut a small hole out of the center of each slice. Place one fried egg on each slice of toast so that the yolk lines up with the hole. Season the eggs with a generous grind of fresh black pepper and a light sprinkle of sea salt.
Serve with sauteed greens and a couple slices of bacon.
Yield: One toadally primal breakfast!
