Caveman Cuisine: Chicken Salad with Cracklin "Croutons"

Ditch the stale bread for crunchy pig skin!


1 6oz grilled chicken breast (sliced)
1-2oz pork cracklins (more info here)
2-3 cups green leaf lettuce (chopped)
1/4 small white onion (sliced thin)
1/4 cup cucumber (diced)
2-3 tbsp cultured organic sour cream
2 tbsp lemon juice
Fresh ground black pepper


In a medium-sized bowl, layer lettuce, onion, and cucumber.  Drizzle with lemon juice and sour cream and season with black pepper.  Top with grilled chicken and pork cracklins.

Yield: Th-Th-Th... That's all, folks!
